I made this bagel sandwich the other day for Sasja. I actually got so caught up with work that I forgot to cook something for us to eat. So I had to think on my feet. What can I do in 10 minutes that will feed both of us and still work with our different taste buds?
Yes, I am like many of you too. I eat one way and my partner eats another. While Sasja may be majority plant based, she absolutely loves white flour bagels, green tea ice cream, white rice, and cake. Lol!
That's not bad to work with! So I guess I'm pretty lucky. She also eats pretty much anything I make.
Ok, so here we are. 10 minutes to make something for both she and I.
What do I make? Keeping in mind her body type and taste preferences and what's important to me.
For Sasja, I made this awesome tomato, cucumber, avocado bagel sandwich* with a smoked garlic hummus spread. (Yes I whipped up some hummus real quick. Takes 1 minute.)
- 1 Can Of Organic Garbanzo beans in the blender
- Add 1 TBS of Smoked Olive Olive Oil
- Juice from Half A Lemon
- 2-3 Cloves of Garlic
- Red Pepper Flakes
- Sea Salt
- Enough water to blend it without it becoming soupy
Spread it on bagel, add sliced cucumber, tomato and avocado. Done!
Now for what I made myself....even simpler.
In a bowl, I threw in half a can of organic garbanzo beans, chopped tomato, chopped cucumber and sliced avocado.
Added sea salt, pepper, lots of garlic powder and balsamic vinegar.
Boom! Meal done and its full of phytonutrients, fiber, carbs, proteins, fats and it's super yummy!
I share this insight to my thought process to really show, how "eating clean" is accessible to anyone. You do not have to eat the same food over and over again. You do not have to be limited to portion sizes.
Just eat fresh food that is grown from the earth! That's it! No secret.
And if you can't fully cut processed foods, like Sasja with bagels, then so what??? As long as you are still eating your fruits and veggies, drinking your water, NOT eating candy and junk food, then your body will balance itself.
If you already have or are at risk for chronic disease, then same will does not apply, because now your food really has to become your medicine.
